How to cook Grill beef with Prahok Dipping Sauce (Sach Ko Ang Toek Prahok: សាច់គោអាំងទឹកប្រហុក)


This kind of recipe is more popular in Cambodia especially in restaurant. Many adults like to have Sach Ko Ang Toek Prahok with wine or beer in the evening after they leave work. Below I will show how to cook Grill beef with Prahok Dipping Sauce (Sach Ko Ang Toek Prahok):

Ingredients

Vegetable 

  1. Cucumber, sliced 
  2. Herb (sweet basil, mint, Cilantro …)
  3. Cabbages, cut in small triangle
  4. Carrot, sliced 
  5. Onion, sliced
  6. Green bananas, sliced
  7. Long bean cut about 3cm
  8.  water spinach, julienne 

Prahok sauce

  1. 2-3 of bird chilies
  2. 1-2 Kaffir lime leaves
  3. 3-4 sliced of galangal 
  4. 4-5 Lemongrass stalk, thinly slice
  5. 3-4 Lemon juice
  6. 4tbsp Sugar
  7. 80g of Prahok
  8. 50g of pineapple
  9. 5-6 garlic cloves
  10. 2-3 tbsp of Peanut, roasted and pounded  
  11. 1 cup of boiled water 

Beef

  1. 500g Sirloin steak
  2. 2tbsp of oyster sauce 
  3. 1/2 tsp pepper 

Instruction 

  1. Start with seasoning steak with oyster sauce and pepper and leave  about 5mns then bring it to grill until it cooks. then slice it and place it in a nice plate then followed by vegetable., set it aside 

    Prepare for the Prahok Sauce    

    Chop Prahok with pineapple, galangal, garlic and kaffir lime leaf until fine then place in the bowl then pour in 1 cup of boiled water, stir well and season with sugar.
    Sliced lemon grass, pounded peanut and sliced lime are set aside in a small bowl, waiting people people need them when serving.

Nhom Sdoa (ញុំស្ដៅ)

Sdoa is a kind of vegetable that is available seasonally from October to March in Cambodia. Its taste  is a little bit bitter but tasty. Some people regard it as favorite food some not because its bitterness. it is not only utilize as food but also as traditional medicine. Below I will show all of you how to make Nhom Sdoa cooking.

Ingredients

  1. 4 bunches of S’dao, 
  2. 60g baconl, boil and slice thinly 
  3. 50 g smoked fish, break into small part
  4. 2 ripe red tomatoes, slice
  5. 1 medium size cucumbe, hash
  6. 2tbsp of peanut, pound
  7. 1tbsp sugar
  8. 1/2tsp salt
  9. 1tbsp fish sauce
  10. 4 cloves of garlic, chop
  11. 2tbsp tamarind juice  or lemon juice
  12. 1tsp of Prahok

Instruction

    1. Blanch bunches of S'dao in boiling water for a second then remove its leaves and flower from stems and keep it in a large bowl.
    2. Add sliced tomato, hashed cucumber, smoked fish and sliced bacon and stir it well
    3. Mix the chopped garlic, Prahok, sugar, fish sauce and tamarind juice then cover onto the vegetable mixture.  
    Note: The amount of tamarind juice and sugar can be adjusted  based on how bitter the Sdao is. If tamarind juice is unavailable, lemon juice is a good substitute.
